Appetizer: Buffalo Chicken Dip
8 oz cream cheese
8 oz shredded cheddar cheese
8 oz ranch dressing
1/3 cup hot sauce
2 boneless chicken breasts - cooked and chunked
Mix all together, place into pie dish, and bake at 350 for 15-20 minutes. Serve with Fritos, or Tostitos or chips of that nature.
I'm on automatic pilot when I shop, and I'll automatically reach for the 1/3 less fat cream cheese and low fat ranch dressing and cheese as well. However, any calories I 'saved' or fat I didn't purchase is definitely made up for when this comes out of the oven. Hey, I never claimed all of my recipes would be healthy! :)
This dish is addicting. The first time I had this was at my friends house. She had single-handedly planned, decorated, and baked for her then very young twins birthday. If I could've taken the empty dish to a corner of the room and scraped every last shred of dip off the plate, I would have done so. It's seriously THAT good.
I made this when I saw my cousins in Connecticut and remember them loving it and being asked for the recipe.
This is also a dish I make for our family get together on Christmas Eve, and it's always a place where people congregate. This year I was even told I was blocking it so no one else could have any! :) My husbands cousin and his wife in Michigan have deemed this "crack dip", have been asked to bring it everywhere they go, and sometimes think the reason they are invited to parties is for the dip! They've also verified that doubling the recipe works perfectly, too, without losing it's flavor or not cooking through.
Needless to say, this recipe is full of memories from the many places it's traveled to, and I hope it will bring many to you as well.
With the Super Bowl coming up next weekend, this might be a great dish to have while watching all of those (hopefully) funny commercials ... because unlike last year, I won't be that into the game. #PatsNation
