Tasty Tuesday's - Zucchini Spice Bread

 

Cooking Spray
1 large zucchini
1 cup packed brown sugar
2 Tbsp sugar
2/3 cup vegetable oil
2 tsp vanilla extract
2 large eggs
1 1/2 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp ground cinnamon
3/4 tsp ground nutmeg
1/4 tsp ground ginger
1/8 tsp ground cloves
3/4 tsp salt

Preheat oven to 350 degrees.

Lightly coat a 9x5x3  pan with cooking spray.  Grate the zucchini (I've used the large hole side and the small hole side, they both work with this recipe), and put aside.

In a large bowl, whisk together the sugars, oil, vanilla & eggs.  In a small bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves and salt. Add the dry mixture to the wet mixture, and stir to combine well.  Stir in the grated zucchini.  Pour into the prepared pan, and bake for 50 minutes or until a wooden skewer comes out clean.  Cool 10 minutes if you can wait that long.

Smear with butter while still steamy, and try your best not to have the whole darn thing.  Yes, it's THAT good.  

My mom makes a KILLER zucchini bread, too, and she has been known to add raisins and nuts to her recipe.  Nomnomnomnom.  My brother and I will fight over who gets more, and I've jokingly sent him pictures of empty containers promised to him that oh-so-accidentally ended in my belly.
